Kale, Cabbage & Carrot Slaw With Honey Mustard Dressing

Serves: 4-6 servings
- 1 TBS olive oil
- 1 TBS honey mustard
- 2 tsp apple cider vinegar
- ⅛ tsp of cayenne pepper
- ¼ tsp kosher salt
- 1½ cups of chopped kale
- 1½ cups of sliced red cabbage
- 1 large carrot, coarsely grated
- 1 small shallot (finely chopped)
- Salt & pepper to taste
- Optional add in: ½ cup of dried cranberries or chopped apple
- Whisk the first five ingredients together in a large bowl.
- Add the kale, cabbage, carrots and shallot. Toss well until the vegetables are coated with the dressing. Add salt and pepper to taste.
