Smoked Turkey Sausage Skillet With Red Peppers & Spinach

An easy camping recipe combining the savory flavor of smoked turkey sausage with lots of veggie goodness.
Ingredients
  • 1TBS olive oil
  • 1TBS butter
  • ½ pound of smoked turkey sausage
  • 4 small russet potatoes (diced)
  • 1 c. diced red onion (about half of a medium sized onion)
  • 1 c. diced red pepper (about half of a large pepper)
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp pepper
  • 8 button mushrooms (sliced)
  • 2 cups of fresh spinach (chopped)
  • 2 pinches of red pepper flakes
Instructions
  1. Heat the olive oil and butter in a 10" skillet over medium heat.
  2. While the oil and butter are heating, slice the sausage horizontally into ½" slices.
  3. Add the sausage slices to the pan, sauté until brown. (2-3 minutes)
  4. When the sausage slices are browned, remove them from the pan with a slotted spoon, place in a bowl and cover with aluminum foil or a plate to keep them warm.
  5. Add the diced potatoes and onions to the pan, cook over medium-low heat, stirring occasionally until the onions are browned and the potatoes are tender. (10-12 minutes)
  6. Add the diced red pepper to the pan, along with the Italian seasoning and the salt and pepper, cook for 2-3 minutes
  7. Remove the vegetables from the pan with a slotted spoon, placing them in the covered bowl with the sausage.
  8. Drizzle a little more olive oil in the pan, if needed.
  9. Add the sliced mushrooms to the pan along with a pinch of salt, sauté until soft. (1-2 minutes)
  10. Add the chopped spinach to the pan with the mushrooms, cook until the spinach is well-wilted. (1-2 minutes)
  11. Add sausage and vegetable mixture from the bowl back into the pan, add the red pepper flakes then toss together for 1 minute to reheat the sausage and vegetables before serving.
